Pantalones Organic Tequila Expands Into Costa Rica

Pantalones Organic Tequila, the award-winning organic tequila co-founded by Matthew and Camila McConaughey, is continuing its international expansion with its official Costa Rica debut at Nekajui, a Ritz-Carlton Reserve, the ultra-luxury oceanfront sanctuary located on Peninsula Papagayo.

Created exclusively with Pantalones Organic Tequila for Nekajui, The Cowboy & Mermaid cocktail collection is inspired by McConaughey’s Texas roots and the sabanero cowboy heritage of Costa Rica’s Guanacaste region. The bespoke cocktail program pairs that ranching spirit with the country’s vibrant surf culture, united by a shared love of craftsmanship, fun, and adventure.

“We literally met over margaritas, and have been known to enjoy a paloma as well. The collection debuts across the resort’s dining destinations, including Puna, the signature restaurant conceptualized by acclaimed Chef Diego Muñoz, Ámbar, a suspended treetop bar, Niri Beach Club, Cooper’s, a hidden speakeasy, and La Casona, the resort’s lobby lounge.

The Cowboy & Mermaid Signature Serves Include:

• Guacachile – Pantalones Organic Blanco Tequila, mezcal, limón mandarina, agave, avocado, jalapeño, and Tajín. A vibrant textural take on the spicy margarita, balancing bright citrus, gentle heat, and creamy richness.
• Goiaba – Pantalones Organic Reposado Tequila, pink guava, agave, citrus, and guava salt. The cocktail pays tribute to a fruit celebrated across both Brazil and Costa Rica, offering lush tropical flavor balanced by bright acidity and a delicate saline finish.
• Tixos Old Fashioned – Pantalones Organic Añejo Tequila, cacao distillate, Costa Rican cold brew coffee, and spiced chocolate bitters. This reimagined Old Fashioned bridges the bold character of Texas with Costa Rica’s iconic coffee and cacao traditions, creating a rich, layered cocktail with warmth, depth, and a lingering finish.
• Palomitas – Combining Pantalones Organic Blanco Tequila, Texas Ruby Red grapefruit, Costa Rican mandarin lime, coconut soda, and a signature popcorn salt rim, this playful take on the classic Paloma balances crisp citrus with tropical effervescence. The popcorn salt adds an unexpected savory note, while the name – Spanish for popcorn – offers a lighthearted tribute to one of tequila’s most beloved cocktails.
